Inspiration Monday – Chocolate Truffles

Let me just start by saying that anything with chocolate is inspirational to me.:-) Same goes for anything with cheese, but for now let’s talk about chocolate – yummy, yummy chocolate.  I found this recipe in the Taste of Home Diet Comfort Food Cookbook and I had to give it a shot.  Just a quick warning before you look at the photos – these little things aren’t very pretty.  That’s probably due to my cooking skills more than the recipe, but I promise you the taste is still very inspiring.

Super simple ingredients:
1/3 cup of semisweet chocolate chips
4 ounces of reduced fat cream cheese
1/3 cup plus 2 teaspoons of baking cocoa (divided)
1 1/4 cups plus 2 teaspoons confectioners’ sugar (divided)

While you’re melting the chocolate in the microwave, you beat the cream cheese in a bowl until it’s fluffy.  Once it’s fluffy and the chocolate is melted you mix them together and add in the cocoa.  It ends up looking a little like this…

I think I look forward to licking the beaters when cooking more than actually eating the final product.  Yum!:-)
Then you gradually beat in the confectioners’ sugar.
Then your truffles look like this.  You take the remaining cocoa and confectioners’ sugar and rub it on your hands.  You roll the truffles into perfect little balls.  The good news about these truffles is that they’re only 62 calories each!
In the picture in the cook book the truffles are coated with cocoa and sugar a lot more than mine, I think I was a little stingy with the cocoa.  But the taste was awesome!  Really rich, kind of like fudge but more cake-like.  Once you create them you need to keep them in the fridge to set up nicely.  Enjoy!
